Ummm... I'm still full from last night's dinner. It was sooooo good! Meet this Friday's Favorite:

Southwest Enchiladas

I was in Publix yesterday, buying stuff to make Cuban sandwiches, and heard the all-call inviting Publix shoppers to taste their featured meal. I immediately headed in that direction,  running over children and the elderly to be sure to get a taste. As soon as I put this deliciousness in my mouth, dinner plans changed.
